Why save space when disks are so cheap?
It's not about the disk space. It's about service times, backup times and contingency, helpdesk questions, restore requests, etc.
If you are using Exchange Server, you know how hard it is to keep user mailbox stores under control.

You can use quotas, but that comes at a cost. A cost of your time spent managing quotas when the users exceed them and forcing your users to manage their mailbox space. If you archive old e-mail, the users complain that they need access to old e-mails. The alternative is to archive mail to PST files, but they have their own set of problems and limitations.
